
Ingredients
4 slices of Melba Toast
1/2 cup cottage cheese
2 nectarines, pitted and cut into wedges
2 tablespoons honey
1 cup broccoli microgreens
Salt and pepper to taste
Directions
Step 1
Preheat your oven to 350°F (175°C).
Step 2
Arrange the Melba toast slices on a baking sheet and toast them in the preheated oven for about 5 minutes or until they are lightly browned and crispy.
Step 3
In a small mixing bowl, add the cottage cheese and season it with salt and pepper to taste. Mix well until combined.
Step 4
Spread the seasoned cottage cheese evenly on top of the toasted Melba toast slices.
Step 5
Arrange the nectarine wedges on top of the cottage cheese, pressing them lightly so they stick to the cheese.
Step 6
Drizzle honey over the nectarine wedges.
Step 7
Place the baking sheet in the oven for 3-5 minutes or until the cheese is slightly melted and the nectarines are slightly softened.
Step 8
Remove the baking sheet from the oven and allow it to cool for a minute or two.
Step 9
Meanwhile, rinse and dry the cress salad microgreens. Place the microgreens on a small plate or bowl.
Step 10
Using a spatula, gently lift the Melba toast appetizers from the baking sheet and place them on a serving platter.
Step 11
Garnish the appetizers with the broccoli microgreens.
