Shrimp and Mango Salad with Mozzarella and Mixed Microgreens

Ingredients

  • 3 cups mixed spring salad mix

  • 2 cups mixed microgreens (sunflower, broccoli, peas,

and radish microgreens)

  • 1 large ripe mango, peeled and cut into bite-size pieces

  • 4 oz. fresh mozzarella pearls, drained

  • 8 oz. cooked medium-sized shrimp, peeled and deveined

  • 1/4 cup raisins

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • Salt and black pepper to taste


For the Dressing:

  • 1/4 cup olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey

  • Salt and black pepper to taste


Directions

Step 1


In a large bowl, combine the mixed salad greens and mixed microgreens. Toss to combine.


Step 2


Add the diced mango, mozzarella, and raisins to the bowl with the greens.


Step 3


Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and season with paprika, garlic powder, salt, and black pepper. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through.


Step 4


Add the cooked shrimp to the salad bowl.


Step 5


In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.


Step 6


Drizzle the dressing over the salad (toss to combine, if desired).
